The V6 in this gen of Camry is generally regarded as solid and reliable.
That being said, regular maintenance is key to longevity in most engines. 30K miles is really low but time is also a factor as things do degrade over time, so basic car maintenance should apply: coolant, oil, filters, tranny drain and fill, etc. If those things have been done then you should be on the right track.
Due to age, if these things haven't been done then should: replace timing belt, alternator, steering belt, water pump, cam & crank seal & tensioner. These are typically changed at the 90K mile mark but your potential car is about 20 years old...
Factory rates your mileage at 20/29 for the 3.0 V6. I have a 2012 V6 and average about 25 with "spirited driving" and I would expect you to have the same.
Also, I don't know if I would buy a used car from any of my ex-girlfriends!!!
