Engine oil: 3.8 qts with filter. Use 10W-30.
PS fluid? Just remove and refill the reservoir between drives until fluid is clear, Dexron II.
Brake fluid: Don't know. DOT3.
Coolant: 6.7 qts. Use something labeled as a "Asian Formula" or Zerex G-05, Toyota brand.
Trans fluid: 2.6 qts for drain/refill of pan, Dexron II.
Differential (trans has separate trans and diff fluid chambers): 1.7 qts, Dexron II.

Dexron II was replaced by Dexron III which is no longer sold as Dexron III. Use something labeled as ATF compatible, ATF Dexron III, Dex/Merc that is compatible with Dexron III. Any auto parts section or store has a selection of these fluids.
