Wink Maintenance 2010 Camry 2.5 LE

Hi,
I am learning how to work on my diesel Volkswagens and am currently rebuilding my engine. So whey am I here? Well, my little sister, whom I am very fond of, has learned this and is now bringing her 2010 Toyota Camry LE 2.5 automatic to me.
She is not an entirely car friendly person. When she first brought it to me it was for a loud grinding noise from the rear wheels. I winged it and replaced the rear brakes and rotors. As they were grinding steel, I assumed it was time to change them.
I tightened the parking brake spinner all the way down and backed it off roughly 360. The parking brake sort of works, but I'm thinking I need to tighten it a little. My sister says she "Does not use that thing." I want to get it working better before I hector her into using it more.
She also recently needed an oil change, so I brought my tools over. I swapped out the oil, but could not get that darn filter off. Neither my VW, nor a universal one I had, could get it off so I'll change it next time. I also re-used a copper crush washer on the oil plug left on from an oil change place. I'm going to change it again at 3000 miles. I'm going to order a pack of rubber washers and a Toyota tool for removing the oil filter.
I did not change the transmission fluid and thought I'd ask about that here.
I'd appreciate links to good forum posts regarding oil change, transmission change and brakes. Plus any other maintenance information you guys think is appropriate.
Possibly a good repair manual if needed.
I'm kind of winging it and need to get more schooled on Toyota's.

For E brakes, install the brake hub and bolt it down with the lug nuts. Adjust the E-brakes until the hub no longer rotates then back off 8 clicks.

Get that special tool for the filter. The internet has videos on changing the filter. Don't rock the filter housing or you can break off the pipe.

As to the trans fluid, how many miles on the current fluid?

I don't know about the trans fluid. I'm just assuming it's been a while. Thanks for the input reg oil filter. Last thing I want to do is break something. lol
