Wondering if anyone can help me diagnose this problem before I take it to the dealer.

If I start out in a downward slope, the transmission seems to "fall" out of 1st gear, the revs then rise a few hundred RPM before the transmission stumbles into the next gear and the revs fall back a few hundred rpm.

There is a reflash for your Camry regarding shift concerns. Take it to the dealer and have your PCM reflashed and see if that helps.
