The PCV Valve hose on my 2007 Camry is hard as a rock, so hard, I'm afraid to take it off for fear of it shattering. Is it supposed to be hard like that? All the videos I've watched seem to show a rubber hose with some give to it.

Can you post a pic for reference? It shouldn't be that hard that you are concerned about it.
